Philosophy

Julian is the person who for the last 60 years has cultivated the pre-phyloxeric vineyard that his grandfather planted on foot franco and at 750 m altitude at the end of the nineteenth century. It is, therefore, a unique vineyard, valuable both for the exceptional quality of the grapes obtained as a reservoir of plant material of garnacha and for serving as a living testimony and reference of a historical area of cultivation of this variety, the Sierra de Yerga.

Winemaking

Manual harvest at the first hour of the day in boxes of 11kg with selection of grapes in the field. Destemmed and covered in stainless steel tank of 500 liters. Cold prefermentative maceration for 2-4 days. Alcoholic fermentation with wild yeast at a controlled temperature around 25°C. Bazuqueos and daily rises up to a density of 1070 and then only bazuqueos until the fermentation is completed. Short postfermentative maceration (2-3 days). Malolactic fermentation in stainless steel tank. 16 months in 6th year American oak barrel. Total sulphurous in bottle, 36 mg / l.
