Cava Reserva is a delicious and refreshing sparkling wine, similar to Champagne, since both obtain this effervescent effect from a second fermentation. Its color is at its base with golden tones, which are slightly mixed with green touches.

For a Cava to be considered "Reserve" it is necessary that it spends at least about 18 months waiting patiently in the cellar, while the second fermentation takes place. This happens after the wine is bottled, and the environment must be very controlled.

When we talk about "Brut" we are referring to a typification of wine that refers to the amount of sugar that we find for each liter of liquor.
This is how a Cava Brut Reserva is a sparkling wine that has gone through a second fermentation in the bottle, for about 18 months, and that has a maximum of 12 grams of sugar per liter.
We can also find a Cava Brut Nature Reserva, with a content of only 3 grams of sugar, or a Cava Extra Brut Reserva, which contains 6 grams of sugar per liter of wine. The sweetener is not added to either of them, on the contrary, it comes from the same grape.

All those Cavas that have been stored in the cellar for more than 18 months are considered to be of Superior Storage (Guarda Superior). In this category we find the Reserva, along with the Cava Gran Reserva and those that have the denomination of Paraje Calificado.
In general, they also have other characteristics that place them in a Premium category, such as the type of cultivation of the grapes, the selection of the same and of course, the location that in the case of good wines is a quality reference.
How many kinds of cava are there?
We have already mentioned the types of Cava that we can find according to the amount of sugar per liter of wine. This categorization is combined with the one that refers to the aging time in the bottle. The second classification would be as follows:
The latter, together with the aging time, must comply with other characteristics, among which the location of the vineyard stands out, which will also have a minimum of 10 years. The harvest must be done by hand and the base wine must have a specific quality level. Like the Gran Reserva Cava, it can only be Brut, Brut Nature and Extra Brut.
