Vineyard
The vineyards are distributed between the Sierra de Cantabria and the Ebro river, mainly in Rioja Alavesa, settled on clay-calcareous soils of non irrigated lands. Pruning is done in a spur pruning. The average age is 40 years and they are at an average altitude of 480 meters.

Harvest
The good weather, which during the whole cycle had favored an excellent vegetative and sanitary state of the vineyard, with absence of plagues or important diseases, also allowed to reach a correct maturational balance in all the vineyards, to which decisively contributed a month September exceptionally favorable for quality.
Winemaking
The exceptional sanitary conditions, contributed to a good development of the fermentations that gave rise to wines well structured, with good color, very healthy and with a good polyphenolic structure.

Ageing
12 months in French oak. 12 months in tank in order to get the natural cleaning and stabilization. 6 months minimum in bottle in order to get the softness, rounding and elegance.
Vineyard
This wine comes from a selected family vineyards located on high altitud areas ( 600 mts above the sea ), with good maturation and fresh climate.
No irrigation and poor soils that produce a controlled amount per Hª and perfect characteristics for the longevity wines.
Continental climate on mountain area and special soils, organic and natural agriculture and selected making process in the winery, produce this personal wine with high frutal intensity of the aromas and flavours.
Tasting Notes
Sight: Intense cherry color with purple hints.
Nose: Black forest fruits; Intensity fruty flavor, fresh and very clean. Good combination between the fruit and the oak well integreated.
Mouth: Full body, tasty flavor, good combination of sweetnes and acidity. Perfect balance that make this wine very apropiate for a lot of food combination. Fruty and smooth tannin; the final is long and slightly sweet but live and fresh.

Winemaking & Ageing
After a careful harvesting of our ecological vines (over ten years of age) and an exquisite manufacturing, using the most avant guard technology together with a high degree of respect when preserving the natural characteristics of the grapes, we obtain carefully selected wines to be aged for a 12-month period in both American and French oak barrels and then lay in our bottle ageing hall.
Tasting Notes
VISUAL: top layer intense cherry red, no evolution, clean and shiny with plenty of tears.
NASAL: Good aromatic intensity and complexity, berries with acidic notes given by the variety Graciano. Fruit compote background and rich toasted like aromas together with subtle and nice spicy and balsamic ones.
TASTE: fleshy structure very nicely balanced, good fruit, slight liquorice like bitterness which gives way smoothly to dark chocolate and light toasted flavours.
Pairing
The variety range of this wine suggest a great variety of dishes. Among these roasted or charcoal grilled red meats, as well as game. We suggest: “charcoal roasted goat with escarole lettuce and red cardoon”.

Winemaking & Ageing
From our least productive ecological vines we select the best grapes of each variety. We use the most Avant guard technology, and controlled fermentation at suitable temperature takes place in order to preserve the fruity and aromatic qualities of the grapes. Maceration with the skins is longer in order to get more structure and complexity in these wines. Lengthy aging for 18 months in French oak barrels and later laying in our bottle hall for over 2 years, end up this process prior placing in the market.
Tasting Notes
VISUAL: Quite covered cherry red colour, with ruby sparkling, hardly any evolution. Clean and shine, plenty of tears.
NASAL: Very expressive and aromatic complexity, wild berries compote in nose, with musky notes and toasted background. Bitter cocoa ending.
TASTE: Fleshy and tasty in the mouth, red and black stone fruits, with a slightly bitter tannin which indicates freshness. Spicy dark chocolate ending with a lengthy aftertaste.
Pairing
Traditional dishes, ideally containing a wine based sauce: Ox tail casserole, beef cheek in red wine sauce, casseroles with sweet vegetables as garnish (leeks, carrots, aubergines or peas) poultry with mixed vegetables. We suggest: “Wood pigeon in a vinaigrette”.

Winemaking & Ageing
Fermentation in temperature controlled stainless steel vats at around 28oC. Spontaneous malolactic fermentation. The wine evolves 24 months in classic barrels, 12 months in French oak, 12 months in American oak. Afterwards the wine rests in bottle for a minimum of 12 months.
Tasting Notes
Cherry red, high intensity and brilliant. Intense and complex nose of stewed red fruits, light toasted notes, with a background of aromatic herbs. Well structured and a long harmonious aftertaste. A wealth of subtleties.
Analysis
13,92% alcohol; 65 mg/l total sulfur; 58 index of total polyphenols.
Pairing
Stews, game birds or ground game, red meat and roasts. Well cured cheeses.
Storing
Can be enjoyed after release yet the wine has a superb storing potential of at least 10 years.
