Ijalba Varietals is a tribute to the history of Rioja, its nature and its origin. A tribute to this land and its unique vineyards. To those minority indigenous varieties that were about to disappear and that Viña Ijalba pioneered to recover.
From those varieties, once almost forgotten, today arise different and very special wines. Wines produced in a natural and ecological way.

Winemaking & Ageing
Manual harvest in boxes of 20 kg; fermentation in oak vats for 20 days. Malolactic fermentation is carried out in vats. The wine continues in French and American oak for 10 months before being bottled.

14.12% alcohol; 55 mg/l total sulphurous; 75 total polyphenol index.
Tasting Note
Attractive red garnet. Complex Aroma: ripe pacharanes, wet grass, mineral, cherry liqueur, licorice. The wine is fleshy with a balanced acidity and abundant flowers, retronasal aromatic herbs highlighting Rosemary.
Pairing
Shellfish, red meat, bull’s tail, manitas and lamb chops. Tuna with spices. Blue cheese and cake.

Winemaking & Ageing
Film maceration and cold pressing for 10 hours. Fermentation 85% in concrete and 15% in American oak barrel, then aged for 3 months on its fine lees.

Tasting Note
Vibrant greenish yellow. Aromas of banana, tropical fruits and toasted. Exceptional texture in the mouth. Dry, fruity and balanced.

Film maceration and cold pressing for 4 hours. Fermentation 90% in concrete and 10% in barrel, then aged for 3 months on its fine Lees.

Tasting Note
Bright wine, golden yellow with greenish touches. Very elegant and complex nose with fresh aromas of tropical fruits, and mineral background, Flint. Generous in mouth unctuous, refreshing acidity and great persistence.

White meat dishes, al dente vegetables, fresh goat cheese, seafood and blue fish.

Winemaking & Ageing
Fermentation in French oak vats with native yeasts for 18 days. Malolactic takes place for three months in oak barrels in contact with Lees and daily stirring. Aged for 10 months in French oak barrels.

13.80% alcohol; 50 mg/l total sulphurous: 80 total polyphenol index.
Tasting Note
High-layer garnet red. Intense Aromas of black fruits, casis, spices and cocoa. In the mouth silky entry with round and persistent tannin, good concentration of fruit and acidity.
