The Cinco Jotas shoulder ham has been made from a careful selection of our 100% Iberian pigs, which are raised free range in the south of the Spain.During part of the fattening process, acorns are the primary source of nutrition for these pigs. This fruit gives the animal a high percentage of oleic acid that in turn gives the shoulder ham its healthy characteristics, such as its high levels of omega-3, omega-6 and omega-9 oils.

Conservation

It is essential that you remove the shoulder ham from the paper that covers it during transport. Carving must be done with care and using the very best tools to get the most out of it. A ham holder, a wide-blade knife to remove the fat, a long and flexible ham knife and a sharpener are essential materials to maximise carving quality. It’s also important to leave the carving area clean and to protect the ham well to avoid oxidation. Always cover the exposed area with thin slices of fat taken from the shoulder ham itself.
