Winemaking
In the elaboration of this cava, respect for natural processes is prioritized. Each process of elaboration is very important to obtain organoleptic characteristics and that is what makes this cava so special. Minimum ageing of 28 months to make this cava complex and structured with a fine bubble. In order to keep the aromas of cava to the maximum, we make handmade disgorging.
Underwater ageing
After ageing in barrels, the wine is bottled and submerged at a depth of 24 metres. Underwater ageing takes place in the Mediterranean Sea in Alicante.

Pairing
It pairs perfectly with Iberian ham with bread with tomato, smoked meats, desserts and nuts.
Optimal temperature for consumption between 6 and 8 ºC.
Tasting Notes
The underwater ageing enhances any nuance provided by the natural yeasts of the second fermentation. It is a cava with fine bubbles, very fresh, aromatic (peach), well balanced with a very pleasant aftertaste.
