Graciano is a fairly unproductive variety, which produces wines of a bright red colour, which are acidic and very aromatic. Very fleshy and balanced. In 1994 we produced our first wine with 100% Graciano, which had previously been considered a variety of lesser importance. It produces a wine which is bright red with a unique aroma. Its balance and rustic charm are what makes it stand out.
Winemaking & Ageing
During the destemming process the grapes are crushed and the must with the grapes are fermented in french oak vats at 28ºC. Malolactic fermentation occurs in classic 225 L french oak barrels. The wine evolves for 10 months in these barrels before bottling.
14.12% alcohol; 55 mg/l total sulfur; 75 index of total polyphenols.
Attractive cherry red.
Complex aromas of “pacharan” (blackthorn berries), wet grass, green pepper, cherry liqueur and liquorice.
Fleshy with a balanced acidity and abundant in fruit.
Storing potential of up to 6 years.
Red meat, oxtail, pigs trotters and lamb chops. Spiced tuna. Blue cheese.
