Characteristics of the wine Envia Cochina
This is one of the most special Albariño wines that are made in the Eladio Piñeiro winery, in the heart of the Galician Rías Baixas. Like the Amodiño Wine, this is an albariño of prolonged aging on lees of various vintages, which makes it a white wine with unique characteristics and that differentiate it from the rest of the albariños of the Rías Baixas Denomination of Origin.
This prolonged aging is named so because after 6 months of aging on its own lees, it is passed to a subsequent and final blend with 15% of a previous vintage, which makes it a broth with a very high complexity.
For the elaboration of the Envidia Cochina, Albariño grapes grown in vineyards with an average age of 36 years are used, all of them with a biodynamic type of cultivation and located in the Val Do Salnés. These grapes are transferred to the winery, where the best bunches are selected and passed to spontaneous fermentation and aging on the lees.

This Tête de Cuvée Envia Cochina surprises us first by its packaging. The label of each vintage is different from that of the previous one, creating a story in the style of a comic newspaper vignette. In addition, the label is thermosensitive, which makes it change color to indicate when the wine is at the ideal temperature to drink it (9-10ºC).
When we taste this wine, the first thing we should look at is its characteristic lemon yellow color with greenish notes. Its aromas of white fruits and apple merge with a saline aroma that transports us to the Galician coasts. Already in the mouth, it enters with a unique freshness that allows us to notice its perfect balance of acidity, and has a great presence with a long finish.
