Characteristics of the Frore de Carme Millésime Brut Nature

This sparkling wine from Eladio Piñeiro has a characteristic that makes it very special: the Carme Millésime Brut Nature Frore has been elaborated following the ancestral method, in which only one fermentation is carried out (not two, as happens in the traditional method). This makes it a Brut Nature sparkling wine with a very fine bubble and integrated into the broth.

This wine is made from a mixture of Albariño (90%) and Espadeiro (10%) grapes, all from late maturing vineyards located in the Salnés Valley and the Ribeira do Ulla (Galicia). These vineyards have an average age of 50 years, in which work has been carried out following biodynamic viticulture for more than a decade.

These grapes are harvested manually, selecting the best bunches once in the winery, where they are macerated and passed to spontaneous fermentation with their own yeasts. The fermentation finishes in the bottle itself, where the cava rests for at least 26 months.

These bottles, like the rest of Eladio Piñeiro’s wines, have a special design. The shape of this reminds us of an amphora, thus following the design of the brand. The label is thermosensitive, which means that its color tells us when it is at the perfect temperature to taste the Frore de Carme Millésime Brut Nature. This cava is a limited edition, with 3594 bottles.

Tasting notes of the Frore de Carme Millésime Brut Nature

It is a crisp and creamy sparkling wine, with a very fine bubble that stands out among its golden reflections. Its aromas are very complex, highlighting especially floral and nutty notes, and with a final touch that gives it a lot of elegance. Already in the mouth, it is an enveloping broth with a fresh and very persistent finish.

The Frore de Carme Millésime Brut Nature also stands out for its gastronomic side of extensive pairing.
