It is essential that you remove the shoulder ham from the paper that covers it during transport. Carving must be done with care and using the very best tools to get the most out of it. A ham holder, a wide-blade knife to remove the fat, a long and flexible ham knife and a sharpener are essential materials to maximise carving quality. It’s also important to leave the carving area clean and to protect the ham well to avoid oxidation. Always cover the exposed area with thin slices of fat taken from the shoulder ham itself.
