Winemaking
Whole berry cold fermentation is carried out into “smart tanks” after destemming at acontrolled temperature.
Malolactic fermentation took place in oak casks. Aged for 24 months in Frenchand Hungarian oak and periodically agitated every 4 months.
Stabilization took place in the barrels.
Bottled without filtration techniques to respect the natural qualities of the wine.
The aging was completed keeping more than 15 months the wine into the bottle.
Tasting Notes
It shows bright and clean, intense red cherry color and the deep red on the border.
The aroma is flagrant, elegant and complex. Stream of aromas first showing fruits such as dried prunes, cherries and blueberries. Then it shows spicy aromas like black pepper, cloves and cinammon, followed by reminiscences of mint and fine hints of oak, cedar, sour chocolate and tobacco leaves.
On the palate it is gentle, velvety, smooth and full bodied, with very polished and ripe tannins. Very structured and fresh, round and powerful,. Fleshy and ripe with a long and lingering finish full of hints.
