Aging: On 15 October the resulting ”free-run” wine was transferred, filling 65 new French oak barrerls from 13 carefully chosen separate cooperages. The goal was to achieve the perfect blend to ensure malolactic fermentation in contact with the less. 17 months later, PERFUME DE SONSIERRA 2014 was bottled to continue its ageing process in the bottle.
Tasting note: This intense cherry-red wine boasts powerful aromas of liquorice, blackberry, redcurrant, caramel, mocha and a touch of mint. In the mouth it is full-bodied, strong and exuberant, offering a feast for the senses that lasts long in the memory.
Pairing: The ideal accompaniment for cured meats, red meat, poultry, oily fish, game, medium-cured cheeses, spicy dishes, vegetable casseroles and other hot dishes such as traditional Rioja-style potato stew.
