The vineyards are distributed between the Sierra de Cantabria and the Ebro river, mainly in Rioja Alavesa, settled on clay-calcareous soils of non irrigated land. Pruning is done in a spur pruning. The average age is 40 years and they are at an average altitude of 480.
Organic Viticulture. Spur pruning system. Small plots.
Alcoholic and malolactic fermentation in concrete tank. Usual head plunging throughout the process of alcoholic fermentation.
12 months in American oak barrels.
Alcohol Volume: 13,7 %, Total Acidity: 4,6 g./l., pH: 3,75; Volatile Acidity : 0,55 g./l.; Total SO2: 60 mg./l.

Ángel Rodrig Alvarez, awarded as Best Pastry Chef in 2010 by the Royal Spanish Academy of Gastronomy and with experience for more than 30 years, starts his Kankel Cacao project in the heart of La Rioja.
As we all know, non-organic agriculture has caused irreparable damage to nature, so respect for the land is part of the philosophy of Kankel Cacao. About 90% of all cocoa produced comes from families that grow cocoa in small fields of less than 5 Ha.
