The wine’s grapes were picked manually in our El Paraje del Seisvineyard. It is a plot planted in 2007, located at an altitude of 510 meters above the sea level. Grape variety: 100% Tempranillo.
The grapes are separated from the cluster and placed in a tank where they are left for 48 hours at a temperature between 5 and 10 °C. Subsequently, fermentation (transforming sugar into alcohol) takes place at low temperatures. Our way of mixing the skins, seeds and liquid is through an innovative system of breaking up the cap by submerging it completely in the liquid. Thus we extract more colour and aromas from the grape variety in our soil, that typical blackberry and violet touch of Paco García Seis.
This wine remains in 225-litre French oak barrels for SIX months in order to refine and polish the fruit. We then bottle it so that it is ready for your enjoyment.
