100% Garnacha grapes, hand picked from our well airated, north facing Las Canteras vineyard, planted in 1986 at an altitude of 470 m. above sea level, on clay and lime, slightly sandy soils, prevalent in the area of Murillo.
Harvest occurs when peak ripeness is reached so that the Garnacha grapes can express their full potential. After destemming, the berries are taken into truncated cone shaped and inverted truncated cone shaped tanks of 10,000 L. each where they macerate for 48 hours at a temperatura of 7ºC. Fermentation then occurs at low temperature in the tanks, which due to their shape, allow us to work successfully on the skin contact helping us to obtain better colour extraction and structure in the wine.
After the subsequent malolactic fermentation is finished, the wine is introduced into French and American oak barrels of both 225 and 500 L capacity, where it remains for a period of 10 months. They are second and third use barrels as the Garnacha grapes are very sensitive to excessive oak exposure. This way, oxygen penetrates slowly through the pores in the oak to perfectly round off the wine.
