Valdubón Crianza is made from Tinta del País (Tempranillo) grapes from vines over 40 years old. The vineyards originating from Valdubon Crianza are spread over different terms of Ribera del Duero, being Roa, Pardilla and Milagros its main origins.
The work carried out in the vineyard is aimed at obtaining a grape in perfect health and to control yields that guarantee a high concentration fruit. For this purpose, cluster clearance is carried out, leaving an average production of 7-8 clusters/strain with a yield of less than 4,500 kg/ha. The quality of the grapes is completed with the pruning in green, guaranteeing the perfect aerated and Sunny of the grapes during the whole ripening process.
A ripening control is carried out on all the plots that supply Valdubón, establishing the optimal harvest date for each vineyard. It controls the evolution of Baumé grade, acidity, tannin and color. On the basis of the results obtained are chosen for Valdubon Crianza those vines that stand out for providing grapes with high concentration of fruit and high phenolic load that ensures a good breeding potential.
The cut grapes are transferred to the winery as soon as possible, being milled before 10 h from collection.
The 2015 harvest became widespread during the second week of October. Valdubon began cutting on September 28 only for plots destined for Valdubon Tempranillo to ensure an optimal sanitary state and a good acidity-sugar balance.
After destemming and squeezing, the grapes for the production of breeders are taken to predetermined deposits. The elaboration of future breeders is designed in such a way that it favors the extraction of color and tannin while keeping the fruit in the aroma. All tanks are equipped with temperature control, fermentation taking place at 28 oC. Maceration lasts for 15-21 days. The time of maceration is decided on the basis of analytical monitoring and daily tasting, paying special attention to the evolution of the tannic and polyphenolic load in general. The date of descube is decided after considering the wine with sufficient body to ensure a good evolution in barrels and before perceiving green tannic notes that decrease the quality of the product.
Once discovered, malolactic fermentation is carried out, daily monitoring of its analytical evolution. After completion it is racked until it is clean and ready for entry into barrel.
The stay in Valdubón Crianza 2015 was extended for 12 months in American oak barrels (67 %) and French oak barrels (33 %). All barrels used have an age of less than 36 months.
The periodic tasting determines the duration of the breeding. Its stay in Wood is considered concluded when the wine has a sufficient roundness in the mouth and an adequate aromatic level that complements the initial fruit giving complexity in the nose.
Racking is carried out every 4 months to ensure an aging without deviations, taking special care to avoid excessive oxygenation of the wine that damages its color and aromas during this process.
In the Cup is a good coat, young, with intense color that still retains hints of bluish indicative of a good aging. The nose is Frank, cheerful and fruity, highlighting the fresh red and black fruit mixed with notes of coconut, cocoa and spices of licorice and thyme.
In the mouth it is powerful and velvety at the same time. Cheerful and mild attack due to a good acidity, balanced with the high alcoholic strength of the vintage. Once on the palate, it shows an elegant evolution of mature tannins. Finally, its acidity helps the passage of mouth providing a long aftertaste.
It is a wine ready to enjoy, although its structure and acidity ensure a correct aging.
