Navardia White Wine

50% Sauvignon Blanc, 50% Garnacha Blanca
Winemaking
The Sauvignon Blanc variety is picked towards the end of august or the beginning of September and White Grenache, one of the local varieties which best adapts to the south area of the denomination’s dry and hot climate and with a longer vegetative cycle, is harvested at either the end of September or the first days of august. Both are picked at their ripening peak, taking advantage of the coolest time of the day. Must is extracted after cold maceration where the skins are present and then it is placed in stainless steel tanks.
Fermentation temperature is around 11º C, and this way all the naturally fruity aromas present in the grapes are preserved. After alcoholic fermentation, a lengthy fermentation, with the fine lees is carried out.
Tasting Notes
VISUAL: Pale yellow with green flashes.
NASAL: Intense and attractive aroma resembling ripe fruit tropical, pineapple, mango and passion fruit.
TASTE: A very fresh impact followed by a tasty sensation in mouth. It is intense with a slight acidic yet sweet feeling. Elegant in the retro nasal channel, it is very easy to drink due to its nice freshness and natural acidity, typical of Sauvignon Blanc. The White Grenache gives volume and creaminess, as well as a very nice glycerine like sensation.

Ideal to be paired with seafood and vegetables. Crayfish, prawns, clams, squid… go nicely with the fruity acidity given by Sauvignon Blanc, while creamy vegetable pairing (courgettes, aubergines, wild mushrooms) will provide us with perfect dishes well balanced with the glycerine typical of the White Grenache.

Winemaking
Cold maceration of the virgin must containing the skins of the red Grenache used for its manufacturing, between 18 and 24 hours approximately, removing the must for his later fermentation at 18 ºC. The original yeast present in the grapes will transform sugar in alcohol, respecting so the natural aromas of the red fruits by not being in contact with the skins.
Tasting Notes
VISUAL: Pale pink, alive, clean and bright with shy youth violet fringe.
NASAL: Fruity and fresh aroma which resembles ripe, acidic berries (raspberries and wild strawberries) with floral notes resembling rose petals and a vegetal ending, with remains of natural carbonic gas which gives a typical sensation and freshness.
TASTE: Fresh entrance in the mouth with acidic notes, especially those primary aromas typical of the Grenache variety. Lengthy aftertaste, balance between fruit and vegetal acidity.
Navardia & Gastronomy
Food with strong character which allow this wine to express its joy, niceness, and lightness typical of the red Grenache variety. Fruity and fresh it pairs perfectly with not too processed products, pasta, mild cheese, and some seafood, and this way the fruit will be favoured along with the vegetal notes. We suggest: “Red tuna fish Carpaccio with tomatoes in a Pedro Ximénez sauce” and “Onion ice cream”.

Winemaking
From grapes ecologically grown, we obtain this young and fruity wine, which outstands because of its nice palate. With unusual roundness and perfect balance, the presence of sulphur dioxide has been reduced, making this wine a natural and healthy product.
It is also a projection our vocation and sensitivity for ecological agriculture and its consequences for the environment.
Tasting Notes
VISUAL: Intense Picota cherry colour, well covered and medium layer, trim with violet sparkling. It is clean and bright.
NASAL: ripe berries, well balanced with spicy notes, such as cloves and black pepper. Balsamic and delicate.
TASTE: Fresh tasty entrance, Berries are present as they were in nose, good structure, lengthy persistent passing, together with a light tone of wild berries (blueberries and gooseberry) with a highlighted vegetal note and soft, light tanning perfectly balanced as a whole.
Navardia & Gastronomy
This wine is the ideal companion for light meals, warm starters, pulses, Rioja style potato soup, game birds and poultry. We suggest: “Organic egg yolk with crystal peppers and chanterelles “The light tannin helps to counterbalance the rubbery texture of the yolk, and the peppers, on the other hand, counterbalance the tannic ending of the wine. The chanterelles provide this dish with a wooden note which compliments this wine perfectly.

Winemaking & Ageing
After a careful harvesting of our ecological vines (over ten years of age) and an exquisite manufacturing, using the most avant guard technology together with a high degree of respect when preserving the natural characteristics of the grapes, we obtain carefully selected wines to be aged for a 12-month period in both American and French oak barrels and then lay in our bottle ageing hall.
Tasting Notes
VISUAL: top layer intense cherry red, no evolution, clean and shiny with plenty of tears.
NASAL: Good aromatic intensity and complexity, berries with acidic notes given by the variety Graciano. Fruit compote background and rich toasted like aromas together with subtle and nice spicy and balsamic ones.
TASTE: fleshy structure very nicely balanced, good fruit, slight liquorice like bitterness which gives way smoothly to dark chocolate and light toasted flavours.
Navardia & Gastronomy
The variety range of this wine suggest a great variety of dishes. Among these roasted or charcoal grilled red meats, as well as game. We suggest: “charcoal roasted goat with escarole lettuce and red cardoon”.

Winemaking & Ageing
From our least productive ecological vines we select the best grapes of each variety. We use the most Avant guard technology, and controlled fermentation at suitable temperature takes place in order to preserve the fruity and aromatic qualities of the grapes. Maceration with the skins is longer in order to get more structure and complexity in these wines. Lengthy aging for 18 months in French oak barrels and later laying in our bottle hall for over 2 years, end up this process prior placing in the market.
Tasting Note
VISUAL: Quite covered cherry red colour, with ruby sparkling, hardly any evolution. Clean and shine, plenty of tears.
NASAL: Very expressive and aromatic complexity, wild berries compote in nose, with musky notes and toasted background. Bitter cocoa ending.
TASTE: Fleshy and tasty in the mouth, red and black stone fruits, with a slightly bitter tannin which indicates freshness. Spicy dark chocolate ending with a lengthy aftertaste.

Traditional dishes, ideally containing a wine based sauce: Ox tail casserole, beef cheek in red wine sauce, casseroles with sweet vegetables as garnish (leeks, carrots, aubergines or peas) poultry with mixed vegetables. We suggest: “Wood pigeon in a vinaigrette”.

Winemaking & Ageing
Careful selection of exclusive grapes from our oldest vines, less productive and ecologically grown make this varietal Graciano unique and balanced, combining features typical of the grape together with those of the soil and climate. Aging for 10 months in French oak barrels and later resting in our bottle aging hall, provide this wine with an elegant and attractive chromatic strength, highlighted by and intense violet colour and dyed tears.
Tasting Notes
VISUAL: Outstanding intense blackberry and cherry colour, well covered. Trim with hardly any evolution.
NASAL: Balance fruit compote aromas, ripe berries (black berries, black currants, blue berries…) with balsamic notes and a coffee bean like ending.
TASTE: Tasty, lengthy and persistent. Outstanding tannins
with toasted notes from a good barrel, being fruit the centre of attention.
