Winemaking of Semi-Sweet Libalis

For the winemaking of this semi-sweet white wine the Muscatel varieties of small grain, Viura and Malvasia were used. Vineyards of organic viticulture, with a lot of salinity and concentration and few kilos of grapes per hectare. The harvest was carried out overnight.

The cold film maceration was carried out for 6 hours. On the other hand, the fermentation was carried out at 16°C in stainless steel tanks, being interrupted with cooling down to 0° C. This process allows to obtain a natural semi-sweet wine, since some sugars do not reach fermentation.
Alcoholic strength: 11.5%.
