Characteristics of the Sinfo Rosé wine Fermented in Barrel
Belonging to the Sinfo collection of Bodegas Sinforiano, this rosé wine stands out for being one of the most special of the winery due in part to its fermentation process in barrel. It is a wine made with the varieties grown in one of the oldest plots of the family, La Crucica. It is located in the municipality of Mucientes at an altitude of 790 meters and on limestone-clay soils.
The grape varieties used to make the Barrel-fermented Sinfo Rosado are Tempranillo (80%), Verdejo (10%) and Albillo (10%). The harvest of these grapes is carried out manually, respecting the tradition of the winegrowing family. The fermentation of the grapes is carried out in American oak barrels of 500 liters, to later pass to the aging of the wine in barrels for 6 months on its lees in French oak barrels of 225 liters. This results in a limited production of 1.052 bottles of this rosé wine.
Tasting notes of the Sinfo Rosé Fermented in Barrels
To the eye, it is presented with a typical color of rosé wines that reminds us of strawberry. The aromas of this wine play with the combination of red fruits such as cherries, raspberries and currants, along with hints of vanilla and toasted provided by the wood. Already in the mouth, we have an elegant, fresh, round wine with a complex finish. The perfect mix between a rosé and a red. To appreciate all its properties, the ideal is to take it at a temperature of between 14 and 15ºC.

The best dishes to accompany the Barrel-Fermented Pink Sinfo are fish in sauce, chicken, grilled vegetables, pasta and rice dishes, grilled or barbecue meats and appetizers of pate, ham or semi-cured cheeses.
