50% Chardonnay comes from a spectacular high mountain vineyard, located between 750 and 800 m of altitude at one end of D.O.Ca. Rioja. It’s a very unproductive Chardonnay clone, with very small clusters, where we obtain yields between 5,000 and 6,000 Kg/Ha. Purely Atlantic microclimate.
50% Tempranillo Blanco comes from a Rioja Alta vineyard, with an Atlantic microclimate and controlled productions around 6,500 Kg./Ha.
The grapes are manually selected from the each vineyard.
Each variety is made independently.
The grapes are vatted after destemming.
Cold maceration during 2 days in steel tanks.
The free run juice is bleeding-of and driven to barrels.
Alcoholic fermentation, at low controlled temperatures of Chardonnay takes place in French oak barrel, and of Tempranillo Blanco in new American oak barrel. Light and medium toast in both type of barrels.
After the fermentation, the wine is aging with their fine lees during 10 months in the same barrels.
Finally, both grape varieties are assembled.
Intense golden yellow color and greenish reflections.
Intense symphony of fruity notes (ripe pineapple, citrus, pear and peach skin) accompanied by notes of pastry and honey, assembled with aromas of vanilla and cinnamon under a floral background.
The entrance in the mouth is sweet. On the mouth is luscious, round and very fresh, with a very pleasant acidity. Very perfumed aftertaste of quince. Very long and lingering finish.
Alcohol: 14,10%, Total Acidity: 6.66 g/l (Ac. Tartárico), Reducing Sugar: 2.0 gr/l., pH: 3.28, Total SO2: 131 mg/l.
