Manual harvest in boxes of 20 kgs

Winemaking

The first fermentation takes place in stainless steel tanks. The second fermentation starts in the bottle while the base wine is kept in a second-use French oak barrel. After 26 months of aging, a manual disgorgement is performed, which consists of extracting the lees or yeasts from the second fermentation.

Underwater ageing

Underwater hoarding for 12 months at a depth of 24 meters on the Alicante coast of the Mediterranean Sea.
