There are four factors that are decisive for the wine in its underwater aging:
- increased pressure
- constant temperature of 14 degrees
- the practical absence of light
- the smooth and balanced movement of the sea currents.
These characteristics make the wines evolve differently, expecting in addition to them a greater life and journey.
Immerse two steel cages with 1,600 sealed bottles of their selected carchelo wine 2012, awarded with 93 points and the status of “Highly Recommended” by the prestigious international magazine Wine Spectator, 40 meters deep in the first underwater winery located on the Mediterranean coast with authorization for underwater aging. After a year regularly monitoring the evolution of the cages that also became, in an environmentally friendly way, artificial reefs for the local marine flora and fauna, they knew that the wine was already ready to emerge from the sea, reborn as Vinamaris Selected 2012.
Monastrell, Tempranillo, Cabernet Sauvignon and Syrah
Alcoholic fermentation in stainless steel.
Malolactic fermentation in barrels.
16 months in New French oak barrel (medium and medium high toasted).
24 months minimum aging in bottle.
12 months on the seabed at 40 meters deep.
12 months of rest in the cellar.
Color: very lively wine and covered with notes of Garnet and Chinese ink.
Aroma: impresses its subtlety and elegance, its delicacy and complexity. Ripe fruit and floral notes blend with characters acquired by its malolactic fermentation and long aging in New barrels of high quality French oak. Thanks to its underwater aging for a year at more than 40 meters deep, it has acquired, in addition to a spicy background with creamy and balsamic notes, a mineral finish and saline memories.
Mouth: the underwater ageing has concentrated its elegance, with polished tannins of ripe fruit and at the same time has maintained its refreshing notes, increasing the sensation of fruit and varietal power.
Great combination with red meat, game meat, duck, rabbit, grilled blue fish, etc.
Spicy spoon dishes like fabadas, cooked, hot rice.
Recommended consumption temperature: between 16 and 17ºC
