Old vineyards in glass, some of them planted “to the table” or in real frame (1,6 × 1,6 m.) and impossible to machine, with an average age of 65 years. Located on limestone soils of the Sonsierra and clay-ferrous terraces of the Alto Najerilla at high altitude, hanging from the slopes of the Sierra de la Demanda facing North.
Manual, in the same day, with different moments of maturity, because they are different areas, to achieve complexity and complementarity.
Co-fermentation of all varieties in the same tank, with the yeasts of the different vineyards, at moderate temperatures (17-18ºC) in stainless steel tanks.
Three years in Bordeaux barrels and three years in bottle. The Oaks of the species Quecus petraea come from a special selection of forests in France and Eastern Europe; one third new, one third with one use and another third with two uses.
Visual: golden yellow, medium intensity, very bright and greenish reflections. In the edging manifested greyish tones.
Nose: of great intensity and complexity for its long life. The sweet aromas stand out, with a background of ripe fruit and frosty fruits. They also highlight notes of hay, cream and vanilla, which are complemented by aniseed nuances to reflect a full and lively nose.
Mouth: surprising its great unctuosity, marked on fire with a vertical acidity and a sweet finish very pleasant background. The palate is accompanied by an excellent salinity, with a finish delimited by the texture of the wood.
