Casa Sala is the original winery on which one of the most important Cava companies in the world, Freixenet, was founded. The sparkling wine of Can Sala is a tribute to those family origins that gave rise to this remarkable legacy of cava both in our country and internationally.
The story goes back more than 100 years, when the couple formed by Dolores Sala and Pedro Ferrer Bosch began to elaborate their first bottles of cava from Casa Sala's vintages. This led a few years later to the founding of the Freixenet winery, today known worldwide for the excellence of its sparkling wines.
The idea of honoring these beginnings arose in 2000, when the couple's son, José Ferrer Sala, decided to restore the facilities of the old family winery. This leads to the elaboration of a special cava from the best selected vineyards of the family winery, and two of Dolores Sala's favorites.
Two plots with more than 75 years of age that are characterized by their low production soils, which makes the quality of their grapes higher. The exclusivity of these lands has allowed the vineyards to be recognized as a qualified site of the Cava Designation of Origin.
It is a sparkling wine created by hand, with the minimum possible intervention and always respecting the time that mark the grapes themselves. The elaboration was carried out in one of the original presses of the family that came from the French Champagne itself.
Can Sala is a cava of long maturation, that is, its aging time in the bottle has been seven years. A period during which the properties of the grapes have acquired their maximum splendor and the exact point of needle in their bubbles.
