Cavas Hill is a century-old family winery located in the province of Barcelona, a privileged area for the cultivation of grape varieties for the elaboration of cava. In addition to sparkling wines, the winery also produces signature wines.
The wine tradition of the Cavas Hill family dates back to 1761, the year in which wine is made from the vineyards planted in the area of Moja (Catalonia). This family tradition continued for generations, but it was not until 1887 that what is now known as the Cavas Hill Winery was founded.
The vineyards of Cavas Hills are located in this region of the province of Barcelona, and they work in an artisanal way to maintain the highest quality of their grapes.
The grape varieties most used in the production of cavas are Chardonnay, Parellada, Macabeo and Xarel·lo. Other types are also cultivated such as Tempranillo, Garnacha or Merlot, with which the signature wines of the Cavas Hill Winery are produced.
To obtain wines with a powerful personality, Cavas Hill uses the coupage technique, by which different grape varieties are mixed for the elaboration of each wine.
Cavas Hill sparkling wines are subjected to a double fermentation process. Bubbles that characterize this type of Cava wines are obtained in the second fermentation.
Another method used to provide quality and authenticity is the aging of the wines, which is carried out first in Allier French oak barrels, and then in the bottle itself.
The winery divides its cavas into two exclusive collections: the Cuvée Panot and the Cuvée 1887, both created to represent an earlier era in the history of Cavas Hill. At the same time, the wines are also grouped into two collections: the signaturewines and the classics of Penedés.
In addition to having a great presence in the domestic market, Cavas and Cavas Hill wines are also internationally known thanks to their exports to more than 100 countries around the world.
