ElixSea is an underwater winery located in the Catalan area of Priorat, where they are dedicated to the aging of wines under the Mediterranean Sea. ElixSea wines have unique properties acquired by the influence of these waters.
The passion for diving and the world of wine has led to the founding of the Elixsea winery (Girona), specialized in the production of underwater wines that have been aged under the waters of the Mediterranean Sea.
ElixSea works together with a traditional winery in the Priorat area, in Catalonia. This is a passionate winery with unique wines that have the Priorat Designation of Origin. The collaboration with ElixSea makes their wines acquire a touch that makes them even more special, the touch of the Mediterranean.
The vineyards in which varieties such as Garnacha, Syrah or Carignan are grown are characterized by their clay soils and their great influence of the Mediterranean climate. These conditions make the grapes acquire unique properties that are transferred to the wines that will later be aged under the sea.
With such a quality raw material, the result of bottled broths can only be excellent, but thanks to underwater aging, that final result is even better.
The waters of the Mediterranean have something special for the aging of wines, their currents and pressures make the properties of the wines look accentuated. Thus, much more complex and round broths are obtained, with more intense colors, aromas and flavors than those aged on land.
Currently, the ElixSea winery has two limited edition underwater wines.
The first of these is the Sea Star, a monovarietal Garnacha (Grenache) that stands out for its elegance and for its freshness in the mouth, properties that have been increased thanks to the aging of six months in the Mediterranean.
For its part, Lega Sea is a wine made with different proportions of Garnacha, Syrah, Cabernet Sauvignon and Carignan. Traditionally created, this broth perfectly represents the wine origins of the Costa Brava thanks to its variety and intensity of aromas and flavors, intensified after six months of underwater aging.
The enthusiasm for wine and diving of the founders of ElixSea is comparable to their commitment to care, respect for the environment and sustainability. Therefore, the underwater cellar in which the wines rest, acts as an artificial reef in which different marine species coexist. And its imprint is also reflected in the bottles of the underwater wine of ElixSea.
