Encinares del Sur is a brand of hams and sausages located in Cordoba (Andalusia) that works in the breeding and marketing of products of 100% Iberian pigs. These pigs are fed on acorns, herbs and roots from the valleys of the area, which results in 100% Iberian Acorn products.

Among these products stands out the 100% Iberian ham from Encinares del Sur with designation of Origin Los Pedroches, which has been awarded the Food Award of Spain for the best Acorn Ham. It also has quality sausages such as 100% Iberian Acorn loin, 100% Iberian Acorn sausage or 100% Iberian Acorn Chorizo.

The breeding of pure Iberian pig (of Iberian mother and Iberian father) has been carried out since the Middle Ages in the pastures of southwestern Spain. There, the animals graze among the forests of cork oaks and oaks, which provide them with one of their main foods: the acorn.

The hams and the paddles of Encinares del Sur go through five careful elaboration processes that denote their final quality: salting and washing, settling the pieces, drying the hams between 6 and 9 months, their aging between 2 and 4 years and, finally, the cala.

The professionalism, together with the care with which the products are treated in each of their stages of elaboration, give the hams and sausages of Encinares del Sur the highest quality. This quality is certified by the Black Label, which ensures that it is a Black Pata Ham.

The farmers of Encinares del Sur are part of the company Dehesas Reunidas S. L., A company of farmers from Cordoba, Badajoz and Ciudad Real that is dedicated to the breeding, fattening and curing of products from the Iberian Acorn pig.
