S’Amfora is a winery in Tarragona (Catalonia) that since 2000 has been dedicated to the production of D.O. Priorat and D.O. Terra Alta wines with a particular characteristic: they are bottled in amphorae and aged under the sea.
S'Amfora is a project that was born with the intention of creating unique wines in the world that recall the origins and winemaking tradition of the Mediterranean coasts. This is how the idea arose to produce wines with Priorat Designation of Origin and Terra Alta Designation of Origin, which would then be aged under the waters of the Mediterranean Sea.
The occurrence of creating these underwater wines comes from the multiple discoveries that have been made in ancient sunken ships in which bottles of wine have been found in perfect condition and with unique properties that had never been seen before.
This led to various investigations about the behavior of wine when it is submerged under the sea for aging. The positive results have led to the creation of several underwater winery projects, such as S'Amfora.
But as far as this winery is concerned, the peculiarity goes beyond, because the wines are bottled in amphorae before their time of marine aging. This special packaging alludes to the ancient containers that were used in the early winemaking of the Mediterranean lands.
For the elaboration of the wines, S'Amfora mainly counts on the collaboration of two wineries. One of them is Celler La Botera, within the D.O. Terra Alta; and the other is Trosset De Porrera, in the area of the D.O. Priorat.
The underwater wines of S'Amfora are aged first in French and American oak barrels, later in amphoras and finally in the sea, where they spend 3 to 8 months of aging under the waters of the Mediterranean. In that period they acquire unique properties that accentuate their color, aromas and flavors, which catch even the most demanding palates.
Thanks to these underwater wines and their particular containers, the S'Amfora winery has managed to transport us to the past, to a time when the Mediterranean area was recognized for the quality and exclusivity of its wines.
