The type of red wine depends on many factors, for example, the type of grape or coupage of grapes used for their elaboration (Tempranillo, Graciano, Garnacha, Bobal, Syrah, Cabernet Sauvignon, Merlot, Pinot Noir, Mazuelo, Mencía, Monatrell etc.), the region from which these grapes come, the climatology of each year, the aging time that you want to give them, the process of fermentation (carbonic maceration, alcoholic, malolactic...), the type of vats in which the aging is done (vats of French oak, American, Amphora, fudre etc), depending on the place where the aging is done (wine cellar, sea, river...).
To sum up there are an infinity number of red wines, whose characteristics depend on an endless number of factors in their winemaking process, although the most important of all, is undoubtedly the raw material used, which is the basis of any good wine.
The pairing of this type of wine is frequently identified with red meat and with more or less heavy meals, but we don’t quite agree with this, because it many occasions red wines can pair perfectly with salads, chocolate desserts etc... And obviously at the end it is the palate of every person that matters, so we think that it is good to experiment with different combinations of wines and different meals, because many times the unthinkable can please our senses and we can discover new sensations.
As for its consumption it is ideal for any time of the day, celebrations and seasons. There is a widespread belief that when summer comes white, rosé, sparkling wines are the only wines that can cool us and that red wines must be put aside for the cold time of the year, but lovers of good red wines have to know that they can continue to enjoy in hot times, because there are really refresh young wines or combined with soda for example can become a summer cocktail (Tinto de Verano, Calimocho).
